Before steamers and delicate dough circles took center stage in his life, Arya explored varied creative fields. He began his career in modeling and later transitioned into commercial bakery work. With her encouragement, Arya resolved to master authentic momo-making from the ground up, dedicated to honoring true Himalayan culinary traditions.

Midnight Dedication: The Labor Behind Every Plate

Behind the simple 3-hour evening service lies hours of tireless preparation. Every single night, Arya and his wife work overnight in their kitchen, meticulously kneading, rolling, and hand-folding each individual momo from scratch. There are no factory-made fillings or commercial shortcuts.
This quiet, midnight labor ensures that every batch served the next evening meets their uncompromising quality standard: completely pure vegetarian, fresh, and wholesome. Alongside their savory dumplings, Arya introduced handmade cheesecakes creating a beloved, rare pairing on Indore’s bustling street food map.

A Father’s Tribute: Naming The Himmi’s

When naming the venture, Arya chose to honor the light of his life: his daughter, Himisha. Calling the brand The Himmi’s infused the cart with genuine warmth, making it feel less like a commercial business and more like food served straight from a family table.
The public response was immediate. Driven by authentic taste and word-of-mouth praise, locals quickly turned the little setup into a sought-after evening food stop.

A Student’s Mindset in the Kitchen

Despite the growing acclaim, Arya remains grounded with an apprentice’s curiosity:
